I have been here before, and so has Joseph, but it is Jimmy’s first time. I have had a decent range of their menu; Tri-Tip Sandwich, Beef Ribs, Baby Back Ribs, and Beef Brisket Sandwich.

The Meal:

Tonight we ordered a full slab of Beef Ribs, a full slab of Baby Back Ribs, and a half pound of sliced Beef Brisket. All the meat was served dry rub, with sauce on the side. For the sides we ordered French Fries, Sweet Potato Fries, and Onion Strings. The meal also came with three Mini Cornbread loafs. We ordered the food to go and brought it back to HQ (a.k.a. Jimmy’s house).

First Impression:

In my opinion the food is good.

The Beef Ribs were a little fatty and slightly burnt, but not too much on both counts; and the Baby Back Ribs were a little dry. The Brisket was good but a little blah.

For me, the sauce redeemed most of the points on my negatives list. It covered the fatty and burnt elements of  the Beef Ribs, and it also moistened the Baby Back Ribs while bringing some life to the Brisket. The meats were overall good quality and good flavored. The sides are consistently good. The Sweet Potato Fries were not mushy like i have had from other places. The Onion Strings were breaded with an easy flour and cream batter that was just enough.

After mulling over the meal I think that the food is good, it is not the best, but it is a good alternative to driving all the way to San Marcos for Phil’s. I would give BBQ Republic four stars out of five ★ ★ ★ ★ ☆
